I am unable to unlock Samsung Galaxy S2 using the unlock without losing data. I followed the steps and unable to find the phone model. The closest model in the list is S3. I understand that I need to select the right model in order to go for the next step.
I am desperately in need to unlock my this old phone to retrieve old data. Appreciate if you could assist me on this so that I can unlock the Samsung Galaxy S2 phone.

As you can see in the image below, all the S2 versions of the Galaxy series are supported, which means that you're either having some problems with connectivity or you have an older version of the software that lacks the S2 support which I high doubt that happens.

No, you're not spied on because this application is not used to spy someone else's phone. The software is used to recover data from the connected Android phones. According to the official developer, you can recover recover photos, SMS, Contacts, Videos, Audios, Docs from your Android device.
To make sure you're not spied, install Malwarebytes from official website and scan the whole computer. If there is something bad installed, Malwarebytes will remove it.
I have been using the program regularly since I have a young daughter who gets on my phone to play games and has a habit of deleting things -- including text messages, phone contacts etc. It has been working great until last week. When I hook up the phone and open the program it just sits on the first screen. It does not go to the screen where I can choose what to recover and where I can click the "Next " button. I have installed the updates and drivers but this it is still not opening. I have contacted Wondershare and they are looking into it. Any ideas on what it could be ?

The application doesn't depend on if it was previously installed or not which means you have the possibility to re-install it. My advice is to re-install the application, then delete something supported by the application and attempt a new recovery. It's known that some applications tend to break others when they're uninstalled or added to the phone. It should work this way. Additionally, wait for a full report from Wondershare.
I recovered some of my text messages, but some of them just have symbols instead of words. Is this normal, and if not, how can I fix it?

Even if you managed to recover some of your messages, it's possible that some are damaged. This is a normal behavior in the case of recovered files. There isn't a recovery tool that can guarantee 100 % success rate. In this matter, there is nothing that you can do. If some of your messages have symbols instead of words, these are the damaged ones and there is no way to recover them.
